Kale and Quinoa Salad:
An original recipe by Liberty Tsighis

This recipe is part of the 30 Ways to Make Quinoa Challenge.

Ingredients

1/2 cup quinoa, cooked
1 cup kale, sliced, washed and stems removed
1/4 tsp paprika
1/4 tsp garlic powder or 1 clove minced fresh garlic
1/4 tsp onion powder
1 tblsp extra virgin olive oil
Half the juice of 1 lemon
Salt and pepper to taste


Instructions

  1. Prepare quinoa . In a bowl of water soak quinoa for 15 minutes and rinse. Bring to a boil 1 1/4 cup of water then add quinoa and bring back to a boil. Then cover, reduce heat to simmer for 12 minutes, let stand for 10 minutes.
  2. Prepare kale by washing leaves and removing the stem. A trick to removing the stem is to simply tear the leaves away from it. Once stems are removed slice or tear into bite size pieces.
  3. Combine quinoa and kale in medium mixing bowl and toss together.
  4. In a separate bowl whisk together paprika, garlic powder, onion powder, olive oil and lemon juice.
  5. Pour olive oil mixture over kale and quinoa and toss until well combined and coated. Add salt and pepper to taste.
