Quinoa, Strawberry and Spinach Salad:
An original recipe by Liberty Tsighis

Salad Ingredients
1 cup quinoa, cooked
1 cup chopped or cubed, turkey breast (omit for vegan and vegetarian)
3/4 cup or 8-9 strawberries, diced
1/4 cup zucchini, diced
2 cups fresh raw spinach, chopped
1/4 cup pumpkin seeds
Salt and pepper to taste
Dressing Ingredients
1 1/2 tblsp cider vinegar
2 tsp granulated sugar
6-8 dashes Worcestershire sauce
1/8 cup grapeseed oil or peanut oil
Instructions
- Prepare quinoa . In a bowl of water soak quinoa for 15 minutes and rinse. Bring to a boil 1 1/4 cup of water then add quinoa and bring back to a boil. Then cover, reduce heat to simmer for 12 minutes, let stand for 10 minutes. Let cool to room temperature.
- Toss spinach and quinoa together. Add turkey, strawberries, zucchini and pumpkin seeds.
- Prepare dressing in a separate bowl, whisk all ingredients together.
- Pour dressing over spinach salad and toss until well combined. Add salt and pepper to taste.
