Quinoa, Strawberry and Spinach Salad:
An original recipe by Liberty Tsighis

Salad Ingredients

1 cup quinoa, cooked
1 cup chopped or cubed, turkey breast (omit for vegan and vegetarian)
3/4 cup or 8-9 strawberries, diced
1/4 cup zucchini, diced
2 cups fresh raw spinach, chopped
1/4 cup pumpkin seeds
Salt and pepper to taste

Dressing Ingredients

1 1/2 tblsp cider vinegar
2 tsp granulated sugar
6-8 dashes Worcestershire sauce
1/8 cup grapeseed oil or peanut oil

Instructions

  1. Prepare quinoa . In a bowl of water soak quinoa for 15 minutes and rinse. Bring to a boil 1 1/4 cup of water then add quinoa and bring back to a boil. Then cover, reduce heat to simmer for 12 minutes, let stand for 10 minutes. Let cool to room temperature.
  2. Toss spinach and quinoa together. Add turkey, strawberries, zucchini and pumpkin seeds.
  3. Prepare dressing in a separate bowl, whisk all ingredients together.
  4. Pour dressing over spinach salad and toss until well combined. Add salt and pepper to taste.
