quinoaWell, according to my pediatrician it means for the past two months I haven’t been able to eat any foods that contain dairy, egg, soy, nuts, caffeine, spices, shellfish and…oh yeah that’s it.

In all honesty it isn’t that hard to eat this way. The only challenge is the infrequent unbearable cravings for cheese (glorious grilled cheeses with Gruyere, cheddar and Emmentaler – oh how I miss thee and nuts). But for the most part it has been pretty easy – it is just taking in a healthy diet of fruits, vegetables and protein (beans, grain or meat).

On Monday we found out that Bennett is all clear of any food allergens. I was under the impression I could start adding foods back but the pediatrician said, “Don’t, because their digestive systems aren’t fully developed.” Damn.

With that said, I was telling my girlfriend Kelly that I want to create some type of challenge for myself like a “Quinoa Challenge.” I’m not sure if I should do “30 Days of Quinoa” or “30 Ways to Make Quinoa.” She thinks I’ll be sick of Quinoa after eating it for 30 days straight – she might be right but I thought I would ask anyway.

Anyone want to chime in and see me do either? Anyone want to do it with me? I’ll take your favorite Quinoa recipes and post them here.

Which would you want to do or see me do? Hunker down and eat Quinoa for 30 days OR provide 30 recipes for making it.
