Prep Time: 0-5 minutes | Cook time: 12 minutes | Yield: 1 cup or 2 to 4 servings
Ingredients:
1 cup raw dry quinoa
1 1/2 cups water or vegetable stock
Instructions:
1. (Optional) In a bowl of water soak quinoa for 5 minutes and rinse. The soaking is to remove any of the bitter outside coating, but if you buy Bob’s Red Mill whole grain quinoa the soaking seems to be unnecessary since most US brands have been rinsed and dried prior.
2. Bring to a boil 1 cup of water or vegetable stock then add quinoa and bring back to a boil. Cover, reduce heat to simmer for 11-12 minutes, let stand for 10 minutes (covered). Can be made 1-2 days ahead.
