Kids and adults will love this crispy, juicy, flavorful and easy-to-make Fried Chicken recipe made with Goldfish crackers as the crust.

Prep Time: 10 minutes | Cook time: 20 minutes | Yield: 2-4 servings

Ingredients:
2 to 4 chicken breasts
1/4 cup safflower oil
1 egg
1/2 cup goldfish, crushed (perfect job for kids)
3 tbsp plain breadcrumbs
1 tbsp dried parsely, crushed
1 tsp paprika
1/2 tsp pepper
1/8 tsp salt

Instructions:
1. Preheat oven to 350 degrees. Rinse and dry chicken breasts, salt and pepper each side. Set aside.
2. Heat safflower oil in a large skillet on medium-low setting.
3. In a mixing bowl create your crust mix. Combine crushed goldfish, breadcrumbs, paprika, parsely, salt and pepper. In a separate bowl scramble the egg. (Tip: Crushing the goldfish is perfect for little ones, place goldfish in plastic bag and double bag then hand the bag to child to crush).
4. Dip chicken breasts in egg to coat and let excess drip away then put in crust mixture and coat. Repeat with remaining chickent breasts.
5. Add chicken to heated oil and let cook for 4 minutes on each side until golden brown. Your crust should not be falling off. Once browned, move chicken breasts to baking dish and cook in preheated overn for 6-8 longer. Test for doneness.

Serve with mashed potatoes or jasmine rice and a baby kale salad or sauteed spinach.
